Meal Plan Monday

I had somewhat of a meal plan written out for this week; however, it has already undergone some adjustments before having a chance to post it.  We received sad news yesterday that my dear friend’s fiance died this weekend.  We will deeply miss him.  Since I spent the day with her today, and may be feeding her at some point again during the week (as well as keeping our own grief in mind), I made a new menu full of comfort foods.   This is such a bittersweet time of knowing that he is at rest in heaven, and yet missing their lost future together.  Please keep “J” in your prayers as she grieves.

Monday
Dinner: Leftovers
Tuesday
Lunch: Red Potato & Spinach Frittata, Homemade Irish Soda Bread (St. Patrick’s Day meal- from yesterday)
Dinner: Homemade Baked Beans, Vegan Corn Muffins, Green Salad & Homemade Dressing
Wednesday
Dinner: Tofu & Veggie Stir-fry, Rice, Coconut Sorbet
Thursday
Dinner: Shrimp Salad on Homemade Bread, Fruit & Yogurt Salad
Friday
Dinner: Stroganoff & Rice (use turkey instead of beef), Cabbage Salad (“Carrot Coleslaw” recipe from Grub)
Saturday
Lunch: Tuna with White Sauce over Pasta, Cabbage Salad
Dinner: Oat Waffles w/Peanut Butter & Jam
Sunday- Easter 
Easter Dinner: 
Lemon Pepper Fish
Mashed Sweet Potatoes
Asparagus
Homemade Bread & Peach Jam
Iced Sun Tea, weather permitting :)
Evening:
Green Salad with Homemade Dressing
