We pretty much stuck with my meal plan last week. There were just a couple dinner changes, so the recipes I didn’t make will be repeated this week. Due to my allergies, I tend to have reactions to many raw produce items (especially potatoes!), so I try to plan recipes accordingly, so that Calvin is home to help with peeling potatoes (Thanks, Hon!).
Dinner: Leek & Cottage Cheese Casserole, Green Salad, Beets
Tuesday (Dr./Dentist Appts.)
Lunch: Quesadillas w/Guacamole & Yogurt, Grapes
Dinner: Potato Soup, Pear, Leftover Flat Bread
Dinner: Tuna Casserole, Green Beans
Lunch: Red Lentil Curry, Brown Rice, Yogurt, Grapes
Dinner: TVP Shepherd’s Pie (to use up leftovers!), Melon
Dinner: Thai Chicken & Carrot Pizza, Melon
Lunch: Bean & Rice Burritos w/Guacamole, Grapes
Dinner: Veggie Lasagna, Garlic Homemade Breadsticks (from leftover pizza dough), Green Salad
