Menu Plan Monday


While driving back from church yesterday, we got a flat tire on our car!  So, I spent this morning at the tire store, walking with Gen around tire displays, and reading Simply In Season.  (Thankfully, our tire was virtually new, still under warranty, and was replaced for free!  Thanks, God!)

We ended up having dinner at friends’ homes a couple nights this week, so I’ll be repeating the menus that we didn’t use, over the next week or two.  We will be going on a short vacation to a quiet retreat center for a few days this week.  (Hopefully, we’ll have a chance to catch up on some reading!)  The unit we will be staying in has a small kitchenette, but no oven.  I have leftover veggie lasagna in the freezer from a couple weeks ago, which I will be thawing out and taking with us, along with some homemade snacks.  
Monday
Dinner: Taco Soup, Yogurt, Carrot Muffins
Tuesday
Breakfast: Maple Oatmeal, Yogurt & Berry Smoothies
Lunch: Cream Cheese Basil Spaghetti, Orange Slices
Dinner: Peanut Butter & Jam Sandwiches on Homemade Bread, Applesauce, Organic Chocolate Cookies, Leftover Smoothie- in a thermos (Eating in the Car)
Wednesday
Breakfast: Muesli (from Nourishing Traditions), Tea
Lunch: Veggie Lasagna, Bread & Butter
Dinner: Nachos (w/ Black Beans, Monterey Jack Cheese, Salsa, Guacamole, & Sour Cream), Apples
Snacks: Deviled Eggs, “Earth Balls” (from Whole Foods Cookbook), Popcorn, Hot Tea
Thursday
Breakfast: Carrot Muffins (leftover from Monday), Eggs, Soy Milk or Juice
Lunch: Baked Potatoes (w/ Broccoli, Cheese, Sunflower Seeds, Chives, & Yogurt), Apples
Dinner: Chickpea Curry (add diced apple), Couscous, Yogurt, Canned Apricots
Friday
Dinner: Skillet Chicken Teriyaki (w/Crushed Pineapple), Brown Rice, Green Beans
Saturday
Dinner: Bean Cheese Rice Squares, Green Salad, Raisin Nut Cookies (from Nourishing Traditions)
Sunday
Breakfast: Porridge (from Nourishing Traditions)
Lunch: Skillet Corn Chowder, Homemade Bread, Fava Beans
