Quick Flat Bread

Otherwise, keep reading for a “lazy Saturday” recipe!  Today, I am making “Finnish Flat Bread.”  I think I got the recipe out of a magazine when I was about 13.  (Taste of Home, maybe?)  That’s when my youngest sister was born, and I got interested in cooking, to help out at home.  Then I started copying down recipes to fill up the recipe box I received for Christmas that year.  It’s an easy, quick bread recipe; almost easier than biscuits, actually, because it’s just one flat round of dough!  Plus, it doesn’t need yeast! 
Finnish Flat Bread
1 1/2 cups all-purpose flour
3/4 cup whole wheat flour
2 Tbls sugar
1 1/2 tsp baking powder
1 tsp salt 
1/2 tsp baking soda
1/4 cup shortening
1 cup buttermilk (or use milk & apple cider vinegar)
In a bowl, combine flours, sugar, baking powder, salt, and baking soda.  Cut in shortening until mixture resembles coarse crumbs.  Add milk, and mix just until dough is moistened.  Knead on floured board for 3-5 min. (My KitchenAid dough-hook works fine for this.)  Pat onto an ungreased 12 in. pizza pan.  Bake at 350* for 30 min. or until golden.  Cool for 10 min. before removing to a wire cooling rack.  Cut into pieces.
