Menu Plan Monday

I had intended to roast a chicken for Sunday’s dinner.  Unfortunately, it had not thawed.  By Sunday night, it still had not thawed, so I wasn’t able to marinade it for Monday’s dinner.  I’m hoping we can have it Tuesday!  Since we didn’t have chicken for Sunday, I made a Sausage/Apple/Sweet Potato Bake; a family favorite!  (I used homemade sausage, made with ground turkey from the Nourishing Traditions [NT] recipe.)  Here’s my plan for the rest of the week:

Monday
Dinner: Lentil Rice Casserole (from 15 Minute Meal Planner) with Salsa, Yogurt, Green Salad with Nourishing Traditions Balsamic Dressing
Tuesday
Breakfast: Fresh Carrot/Fruit Juice, Nourishing Traditions Muesli, NT Sausage Patties
Lunch: Broccoli Oven Pancake (from Simply in Season), Applesauce, Homemade Bread, Butter
Dinner: Roast Sticky Chicken (finally!), Sweet Potatoes with Honey Mustard Dressing, Bread & Butter, Herbed Corn
Wednesday
Dinner: Baked Tilapia with leftover Honey Mustard Dressing, Orange Slices, Wild Rice, Leftover Herbed Corn, Oatmeal Spice Cake
(Use yesterday’s chicken to make Chicken Stock– to freeze.)
Thursday
Breakfast: Apple Oven Pancake (Simply in Season), Nourishing Traditions Sausage Patties, Bran Muffins
Lunch: Vegetable Pizza Bites (Simply in Season), Fruit & Yogurt Smoothies, Carrot Sticks & Dip (Make Mayonnaise Tues.)
Dinner: Vegetarian Taco Salad w/Kidney Beans & Corn Chips, Yogurt, Salsa, Spanish Rice, Orange Slices
Friday
Dinner: Shrimp with Coconut Curry Sauce, Brown Rice, Canned Lychees (from Uwajimaya), Thai Iced Tea
Saturday
Dinner: Nourishing Traditions Chicken Gumbo (with leftover chicken from Tues.), Wild Rice, Green Salad
Sunday
Breakfast: Baked Oatmeal (Simply in Season), Eggs, Fresh Carrot/Fruit Juice
Lunch: Lemon Baked Tilapia, Garlic Sesame Broccoli, Bread & Butter
Dinner: Lentil-Vegetable Soup w/Dumplings, Corn Bread, Green Salad
