Menu Plan Monday


The meats in my menus are usually based on what good deals I can find at Grocery Outlet.  I usually find ground or sliced turkey, frozen fish fillets, or canned salmon.  This week I was able to find sliced turkey and canned Alaska wild salmon, so they will be appearing frequently.  Gen loved carrying the cans of salmon throughout the store, and stacking them next to her on the seat in the grocery cart!  I also got a 10 lb bag of organic brown rice at Costco.  Here is this week’s menu:

Monday  
Dinner: (Moved from Sunday) Lentil-Vegetable Soup w/Dumplings, Corn Bread, Green Salad with Honey Mustard Dressing

Tuesday
Breakfast: Nourishing Traditions Muesli, Fresh Carrot/Orange Juice
Lunch: Chef Salad with Egg, Cheese, Sliced Turkey & Sunflower Seeds, Leftover Corn Bread, Orange Slices
Dinner: (Company for Dinner) 40-Minute Hamburger Buns, Salmon Patties with lettuce & tomato, Carrot Sticks, Brownies
Wednesday
Dinner: Moroccan Chicken, Canned Apricots, Green Salad, Homemade Brown Bread
Thursday
Breakfast: Apple Bread, Eggs, Orange Smoothies
Lunch: Skillet Mac & Cheese w/wheat germ & spinach, Carrot Sticks
Dinner: Pizza (homemade whole wheat crust) with Sliced Turkey & Pineapple, Green Salad with Nourishing Traditions Balsamic Dressing
Friday
Dinner: Chicken & Sweet Potato Curry w/pineapple & coconut, Brown Rice, Green Beans, Coconut Sorbet

Saturday
Dinner: Salmon Broccoli Bake, Apricot Glazed Carrots, Molasses Cookies
Sunday
Breakfast: Nourishing Traditions Porridge with Homemade Peach Jam, Eggs
Lunch: Whole Wheat Spaghetti & Spinach with Thai Peanut Sauce, Orange Slices
Dinner: Pumpkin Curry w/Lentils & Apples, Yogurt, Brown Rice, Coconut Sorbet
