Menu Plan Monday

I’m using mostly pantry/freezer items this week.  Gen came down with a cold this past week, and (of course) passed it on to me, so I’m not feeling super creative right now.  :)  Since I’ve been pretty exhausted, Calvin has been helping me prepare and plan meals.  (Thanks, Hon!) 

Breakfast: Whole Grain Muffins, Peanut Butter, Fresh Carrot/Fruit Juice
Lunch: Black Bean Soup, Yogurt, Baked Corn Chips, Green Salad & Homemade Dressing
Dinner: Veggie & Cheese Omelets, Homemade Bread & Butter, Apricot Glazed Carrots
To Do: Make Butter, Soak Brown Rice and Muesli for Tuesday, Thaw Salmon for Wednesday
Breakfast: Nourishing Traditions Muesli (with Steel-Cut Oats), Orange Juice or Hot Tea, Eggs
Lunch: Grilled Cheese Sandwiches, Carrot Sticks, Kiwi
Dinner:  Lentil/Millet Burgers (from Super Baby Food) served with Braggs’Brown Rice, Green Salad with Homemade Dressing
(Make extra rice for Wednesday.)
To Do:  Soak Waffle Batter for Wednesday
Breakfast: Waffles, Orange Smoothies (substitute fresh orange & yogurt; reduce sugar), Turkey Bacon
Lunch: Egg Salad Sandwiches on Homemade Bread, Maple Carrot Salad,
Dinner: Garlic Baked Salmon, Broccoli Rice (from More With Less)
To Do: Soak Lentils and Porridge for Thursday
Breakfast: Nourishing Traditions Porridge, Eggs, Orange Juice or Hot Tea
Lunch: Curried Carrot Soup (from Simply In Season), Homemade Bread with Peanut Butter, Kiwi Fruit
Dinner: Lentil-Rice Casserole (from 15-Minute Meal Planner), Green Salad with Homemade Dressing
To Do: Soak Beans, Rice and Tortilla Batter for Friday
Breakfast:  Breakfast Sandwiches (homemade biscuits, turkey bacon, egg, & cheese), Fresh Carrot/Fruit Juice
Lunch: Leftovers, Green Salad with Homemade Dressing
Dinner: Black Bean & Rice Burritos with Homemade Tortillas, Yogurt, Carrot Sticks 
(Make extra rice for Saturday.)
To Do: Soak Coffee Cake Batter and Lentils for Saturday, Make Yogurt
Breakfast: Buttermilk Coffee Cake, Cheesy Scrambled Eggs, Fresh Carrot/Fruit Juice
Lunch: Salmon Salad Wraps (on Homemade Tortillas), Green Salad with Homemade Dressing
Dinner: Red Lentil/Rice Soup, Yogurt, Orange Muffins, Carrot Sticks
To Do: Soak Beans and Cornbread Batter for Sunday
Breakfast: Pancakes (Calvin’s recipe), Eggs, Orange Juice or Hot Tea
Lunch: Stovetop Baked Beans, Green Salad with Sprouted Sunflower Seeds & Homemade Dressing, Cornbread
Dinner: Peanut & Veggie Stir Fry, Brown Rice, Orange Slices
