Menu Plan Monday

For this week’s menu, I will be mixing in odds & ends leftovers that I have in the fridge, as well as some new items.  During the week, I periodically go through the fridge to “clean it out.”  I make sure to mix leftovers into meals, or freeze them for a lazy/busy day.  Many leftover items (especially breakfast foods) usually get eaten for snacks, or to supplement a small lunch/dinner plan.  

We often take snacks in the diaper bag for Gen, and she really likes the homemade corn “chips,” strips of homemade tortilla, or homemade crackers or muffins.  Also, I will often pack a container of cut up orange or banana slices for her.  A sippy cup of water is a favorite, too!

Pretty much all my groceries are still “pantry” items from my co-op order.  We did pick up a watermelon, and some cheese and eggs the other day, as well as our weekly raw milk delivery.  Our pots of lettuces have been growing well, so we are eating lots of salads topped with sprouted sunflower seeds.  Yum!  On the other hand, our kale seems a bit confused as to which season it is, so we’ll see if we actually get to eat any of it eventually!  


Breakfast: Brunch at a friend’s house. :) 
Lunch: Egg/Veggie Stir-Fried Brown Rice with homegrown chives
Dinner: Creamed (leftover) Salmon over Whole Wheat Biscuits, Green Salad with Nourishing Traditions Balsamic Dressing
Dessert at a friend’s house. :) 

To Do: Soak Pancake Batter and Muffin Batter for Tuesday, Soak Beans for Wed.

Breakfast: Buttermilk Pancakes, Eggs
Lunch: Grilled Cheese Sandwiches, Orange Slices, Green Salad
Dinner: Red Lentil/Rice Soup, Watermelon, Lemon Muffins

To Do: Cook Beans For Wed., Soak Porridge and Tortilla Dough, Soak Bread Dough

Breakfast: Nourishing Traditions Porridge, Eggs, Fresh Carrot/Fruit Juice
Lunch: White Bean Hummus, Homemade Tortillas, Carrot Sticks
Dinner: Salmon Quesadillas, Green Salad, Watermelon

To Do: Soak Beans for Thurs., Bake Bread (additional instructions here), Make Yogurt

Breakfast: Cheese Omelets, Orange Slices, Leftover Muffins
Lunch: BLT Sandwiches (with Turkey Bacon & Homemade Bread), Carrot Sticks
Dinner: Black Bean Vegetable Soup (from Veganomicon), Watermelon, Baked Corn Chips

To Do: Soak Waffle Batter and Barley, Make Butter

Breakfast: Waffles, Eggs, Fresh Carrot/Fruit Juice
Lunch: Homemade “Nachos” (with leftover corn chips & beans), Orange Slices, Carrot Sticks
Dinner: Roast Chicken, Barley Salad, Green Salad

To Do: Start Sprouting Sunflower Seeds, Soak Coffee Cake Batter

Breakfast: Buttermilk Coffee Cake (omit honey), Turkey Bacon, Fresh Carrot/Fruit Juice
Lunch: Egg Salad Sandwiches, Watermelon, Carrot Sticks
Dinner: Homemade Egg Noodles (from Super Baby Food) with Shredded Chicken & White Sauce, Green Salad

To Do: Make Chicken Stock, Make Deviled Eggs, Soak Muesli

Breakfast: Nourishing Traditions Muesli, Turkey Bacon
Lunch: Cheesy Polenta, Deviled Eggs, Orange Slices
Dinner: Lentils & Rice with Caramelized Onions (from Veganomicon), Green Salad
