Menu Plan Monday

I’m planning on doing very little grocery shopping this week (probably just eggs, milk, cheese, and fruit), as we’re waiting for a new job for Calvin.  (I’m hoping to fall back on our savings account as little as possible; it’s a fun challenge!)  I do still have a good pantry/freezer supply.  I made a couple loaves of bread, hummus, and a batch of yogurt last week, as well.  We also have plenty of popcorn and nuts for snacks, if needed.  Calvin requested “breakfast for dinner,” so we’ll be having that on a couple evenings.  It’s always a fun, frugal option! 

Monday
Breakfast: Leftover Buttermilk Coffee Cake, Eggs
Lunch: Thai Chicken/Carrot Pizza (homemade whole wheat crust*), Sesame Broccoli
Dinner: Buttermilk Pancakes, Turkey Bacon, Cantaloupe
(*recipe makes 2; use 2nd crust on Friday)

To Do: Soak Muesli and Millet, Make Buttermilk Salad Dressing (from Whole Foods Market Cookbook), Thaw Soup, Make Chicken Stock, Start Sprouting Sunflower Seeds

Tuesday
Breakfast: Nourishing Traditions Muesli (with almonds & raisins)
Lunch: Lentil & Rice Soup (from freezer), Homemade Yogurt, Green Salad with Hard-Boiled Eggs, Homemade Bread & Butter
Dinner: Turkey Meatloaf, Carrot Sticks, Nourishing Traditions Millet Casserole
To Do: Soak Bulgur and White Beans, Soak Muffin Batter, Make Butter
Wednesday
Breakfast: Breakfast Bulgur (stovetop, not microwave), Eggs, Fresh Carrot/Fruit Juice
Lunch: Grilled Cheese Sandwiches, Green Salad w/Carrots & Sprouted Sunflower Seeds
Dinner: White Chili (from Simply In Season), Watermelon, Corn Muffins
To Do: Make Mayonnaise, Soak Brown Rice (make extra for Sunday) and Granola
Thursday
Breakfast: Spinach Omelets, Leftover Corn Muffins
Lunch: Vietnam Fried Rice, Watermelon
Dinner: French Toast (on homemade bread), Turkey Bacon
To Do: Make Granola
Friday
Breakfast: Yogurt Parfaits with Homemade Granola and real, organic Maple Syrup or homemade Pear Jam, Fresh Carrot/Fruit Juice
Lunch: Herbed Pizza Bread (from Gooseberry Patch’s Celebrate the Seasons), Cheese Slices, Watermelon, Carrot Sticks
Dinner: Egg & Bacon Pie, Green Salad with Homemade Dressing & Sprouted Sunflower Seeds
To Do: Soak Black Beans, Porridge, Muffin Batter, and Tortilla Batter
Saturday
Breakfast: Nourishing Traditions Porridge, Eggs
Lunch: Black Bean Soup, Homemade Yogurt, Millet Muffins, Carrot Sticks
Dinner: Quesadillas on Homemade Tortillas, Green Salad
Sunday
Breakfast: Cinnamon Toast (homemade bread), Turkey Bacon, Fresh Carrot/Fruit Juice
Lunch: Egg Salad & Spinach Wraps, Fruit 
Dinner: Tuna & Rice Casserole, Carrot Sticks
