Menu Plan Monday

Since we will be visiting family for part of the week, I won’t be doing firm menu plans for the entire week.  (I will take food along, though.)  We were given some asparagus and melon tonight from some friends, and we have lots of buttermilk from making butter this last week.  I have granola in the oven right now, and we still have part of the chicken I roasted last week, along with some other leftovers that I need to use up. We will pick up our raw milk order before we leave town on Wednesday, to make sure we have milk for Gen while we’re gone.  I have some meals in the freezer, so we can pull something out, if needed, when we return home next week.  

Calvin is also planning on taking the car into the shop tomorrow morning, so it will be a busy day.  It appears to be having some type of transmission issue.  (It’s been gradually getting worse for the past year!) We’re hoping to have it repaired before our road trip.  

We were disappointed to find out yesterday (finally!) that our application to the CSA wasn’t accepted this year (too many applicants!).  We decided that we will just have to make lots of visits to local farms directly or to Farmer’s Markets!  We did go to one local pesticide-free farm yesterday and got a flat of strawberries.  (We froze most of them, but kept a pint out to eat.) We were also able to take Gen out to their barn, where she got to see chickens, rabbits, a goat, and a llama!  (Unfortunately, we weren’t able to get any photos; the camera batteries hadn’t been put in the charger, so they were quite dead.)

Breakfast: Homemade Granola, Homemade Yogurt, Strawberries
Lunch: Chicken Florentine (with fresh spinach), Watermelon, Carrot Sticks
Dinner: Buttermilk Pancakes (Calvin’s request!), Cheesy Scrambled Eggs

To Do: Soak Muesli, Bake Banana Bread

{I had to pause here to award a sticker to Gen.  She used the potty for the first time!}

Breakfast: Nourishing Traditions Muesli, Turkey Bacon
Lunch: Spinach Egg Drop Soup, Turkey & Cheese Slices, Homemade Bread & Butter, Melon
Dinner: Tuna & Rice Casserole (moved from Sunday; use leftover rice), Green Salad with Carrots, Lemon-Honey Dressing (from Nourishing Traditions)

To Do:  Make Yogurt (if time), Soak Coffee Cake Batter, Make Butter, Bake Bread (no, it’s not NT-style, but since I’ve been reading Four-Season Harvest, I’ve been craving rustic French food!) :)  

Breakfast: Spinach & Cheese Omelets, Buttermilk Coffee Cake
Dinner: Leftover Hummus, Homemade Baked Corn Chips, Fruit Salad

Thursday-Monday: Visiting Family
Homemade Breads (wheat and banana)
Sunflower Seeds
Frozen Homemade Baby Porridge
Peanut Butter
Canned Fruit/Beets
Homemade Butter
Sliced Turkey
