Menu Plan Monday

I’m anticipating a different schedule this week, so I have some fairly easy meals on the menu to allow flexibility.  I checked the weather forecast, and I’m trying to plan any baking around cooler/rainy days. Otherwise, I’m trying to stick with plenty of summery meals!  I baked two loaves of sourdough bread yesterday, so I have one loaf in the freezer.  

Monday
Breakfast: Toast with Peanut Butter
Lunch: Cheese Sandwiches with Lettuce, Berries

Dinner: Chicken-Pesto-Tomato Pizza, Melon, Carrot Sticks

To Do: Soak Rice
Tuesday
Breakfast: Leftover Grains, Berries, Peanut Butter
Lunch: Salmon Salad-Stuffed Bell Peppers (similar to this), Melon
Dinner: Omelets, Curry Rice Pilaf (from The Gluten-Free Gourmet Cooks Comfort Foods), Carrot Sticks
Wednesday
Breakfast: Morning Rice, Eggs
Lunch: Cottage Cheese-Stuffed Baked Potatoes (page 43), Green Salad with Sprouted Sunflower Seeds
Dinner: Stir-Fry with Peanut Sauce, Berries
 To Do: Soak Millet, Thaw Salmon, Freeze Ground Turkey, Soak Beans
Thursday
Breakfast: Gluten-Free Nut Waffles, Eggs
Lunch: Lemon-Garbanzo Soup, Bread & Butter, Berries
Dinner: Roasted Garlic SalmonStir-Fried Cabbage, Leftover Brown Rice
To Do: Roast Garlic, Bake Gluten-Free Cinnamon Raisin Bread, Thaw Bacon, Thaw Lamb

Friday
Breakfast: Millet Porridge, Eggs
Lunch: Spicy Black Bean Soup (Cold or Hot), Cheese/Yogurt, Carrot Sticks, Crackers/Bread
Dinner: Berry French Toast, Turkey Bacon
To Do: Make Butter
Saturday
Breakfast: Gluten-Free Apricot-Carrot Muffins, Peanut Butter
Lunch: Fried Egg Sandwiches, Green Salad with Sprouted Sunflower Seeds
Dinner: Balsamic Vinegar Lamb, Bread & Butter, Berries
To Do: Bake Teff-Peanut Butter Cookies (Thanks, Carrie!)
Sunday
Breakfast: Berry Smoothies, Eggs, Leftover Muffins
Lunch: Cottage Cheese/Cheddar, Popcorn, Carrot Sticks
Dinner: Quinoa Tabbouli, Cucumber, Tomatoes, Sprouted Sunflower Seeds, Yogurt
To Do:  Make Butter, Order Milk
