Menu Plan Monday

Well, it’s another week of making a meal plan for an uncertain schedule.  Calvin didn’t get any work last week, so we’re hoping some assignments show up this week (prayers appreciated!). Since I don’t know if he will be home, or if I will need to pack a lunch, I’ve tried to plan a variety of things that I can switch at the last minute, if needed.  I’m also using up an array of leftovers! 


Breakfast: Cinnamon French Toast, Yogurt or Peanut Butter
Lunch: Eggs Carbonara, Berries, leftover Quinoa Tabbouli, Lacto-Fermented Ginger Carrots
Dinner: Pad Thai, Leftover Soup, Coconut-Lime Cooler (from Eat Fat, Lose Fat), Cabbage Salad (from Grub)
To Do: Soak Rice, Thaw Ground Turkey, Make Sourdough Bread
Breakfast: Eggs, Toast, Berries
Lunch: Cheese & Lettuce Sandwiches, Carrot/Celery Sticks, Lacto-Fermented Pickles
Dinner: Salmon Egg-Foo Yung, Ginger-Rice (from More From the Gluten-Free Gourmet), Peas & Corn
To Do: Bake Sourdough Bread, Soak White Beans
Breakfast: Gluten-Free Hazelnut Waffles, Yogurt, Berries
Lunch: Hard-Boiled Eggs, Carrot/Celery Sticks, Leftover Pizza, Cucumber Salad
Dinner: Turkey/Lentil/Rice/Flax Meatloaf (use leftover lentils & rice), Garlic-Mustard Red Potato Skewers, Green Salad
To Do: Soak Wooden Skewers, Pick Up Milk, Prepare Pudding, Thaw Muffins, Cook Beans
Breakfast: Coconut Pudding (from Eat Fat, Lose Fat), Berries, Granola
Lunch: Honey Nut Salad, Apricot-Carrot Muffins (from freezer)
Dinner: Baked Beans, Teff Pancakes, leftover Cucumber Salad

To Do: Soak Beans (for taco salad), Thaw Turkey, Thaw Elk

Lunch: Taco Salad, Berries
Dinner: Potato-Salmon Casserole, Carrot Sticks
To Do: Soak Millet, Make Granola Bars, Boil Eggs
Breakfast: Curried Stuffed Eggs, Toast
Lunch: Cottage Cheese, Popcorn, Berries, Carrot Sticks
Dinner: Turkey Meatballs in Cilantro-Yogurt Sauce, Millet, Green Salad
To Do: Soak Oats, Make Butter
Breakfast: GF Muesli with Yogurt or Peanut Butter Oatmeal
Lunch: Leftovers, Berries
Dinner: Elk Steaks, Green Salad, Bread & Butter
To Do: Start Sprouting Sunflower Seeds, Order Milk
