Menu Plan Monday

After cleaning out our refrigerator prior to our camping trip, I need to get some groceries soon! I’m planning on a trip to a local farm later this week, hoping to find some peaches and tomatoes.  We have begun enjoying fresh homegrown tomatoes, as well, from our container garden on our patio.  I’m keeping the menu simple this week, as we adjust to a new schedule.  
Oh, and for those inquiring minds, the Potatoes in the Coals (from this book) for our camping trip dinner were incredible.  We ended up using yams, and their caramel-smell wafted up to us from the fire pit as they cooked to perfection. We topped them with local shrimp, cheese, cherry tomatoes, cippolini onion, and a sprinkle of sea salt.  Heavenly.  
Breakfast: Nourishing Traditions Porridge or Teff Porridge, Eggs, Berries
Lunch: Cottage Cheese, Cherry Tomatoes, Leftover Muffins
Dinner: Curried Salmon, Millet, Watermelon
To Do: Thaw Ground Turkey, Soak Beans, Make Sourdough Bread, Make Butter
Breakfast: Pan-fried Potatoes (from freezer), Eggs
Lunch: Peanut Butter or Tuna Sandwiches, Soup?, Peas
Dinner: Taco Salad (similar to this one), Watermelon
To Do: Soak Muffin Batter, Soak Rice, Bake Sourdough Bread
Breakfast: Cheesy Scrambled Eggs, Toast & Homemade Marmalade
Lunch:  BLT Sandwiches, Berries
Dinner: Summer Rolls with Peanut Sauce, Brown Rice, Watermelon
To Do:  Bake Muffins, Bake GF Bread
Breakfast: Coconut-Vanilla Muffins, Bacon
Lunch: Egg Salad Sandwiches, Berries
To Do: Canning Fruits
Breakfast: Eggs, Breakfast Quinoa
Lunch: Peanut Butter & Jam Sandwiches, Carrot Sticks
Dinner: Oriental Red Meat Salad, Leftover Rice, Green Salad
To Do: Soak Millet, Soak Almonds
Breakfast: Millet with Peanut Butter
Lunch: Chef Salad (cheese & egg), Bread
Dinner: Curried Carrot Soup, Leftover Muffins, Cottage Cheese
To Do: Soak Lentils
Breakfast: Yogurt with Berries & Nuts/Seeds
Lunch: Omelets, Leftover Millet or Quinoa
Dinner: Honey Baked Lentils (from More With Less), Bread, Carrot Sticks
To Do: Bake Sourdough Coffee Cake, Order Milk
