Menu Plan Monday

Calvin & I just got home from our camping/hiking trip at the coast.  We brought home a bag of Salal berries that we picked during our hike.  We’re still working our way through the apples from last week, too.  Our dear, dear friend brought over her dehydrator, and began drying some apples for me while we were gone (thank you!), and I’ll be continuing it through the week. We’ve also been enjoying homegrown produce from our container garden on our apartment balcony.  Tomatoes have been ripening daily, and we just picked our first batch of beans (planted for a “late harvest” crop)!  

Breakfast: Zucchini Bread, Eggs
Lunch: Cheese Sandwiches, Carrot Sticks, Berries
Dinner: Vietnam Fried Rice, Popcorn, Melon
To Do:  Slice Apples for Mom’s Group, Dehydrate Apples, Soak Black Beans, Make Butter
Breakfast: Coconut Omelets, Apple Slices
Dinner: Black Bean Soup, Cornbread, Carrot Sticks, Homegrown Green Beans
To Do: Make Salad Dressing, Dehydrate Apples, Soak Pumpkin Seeds, Soak Millet, Make Mayonnaise
Breakfast: Chocolate Waffles, Peanut Butter, Berries
Lunch: Egg Salad Sandwiches, Green Salad
Dinner: Turkey-Apple Burgers, Millet, Carrot Sticks
To Do: Roast Pumpkin Seeds, Soak Brown Rice, Soak Kidney Beans
Breakfast: German Pancake, Berries
Lunch: Cheese Slices, Apple Slices, Nuts & Seeds, Bread/Crackers
Dinner: Southwestern Bean & Rice Salad on Homemade Corn Tortillas, Carrot Sticks
To Do: Dehydrate Apples
Breakfast: Peanut Butter & Toast, Milk, Raisins
Lunch: Cheese Sandwiches, Carrot Sticks
Dinner: Apple Omelets, Green Salad, Bread & Butter
To Do: Bake GF Bread, Soak Waffle Batter
Breakfast: Surprise Waffles, Eggs
Lunch: Leftovers, Apple Slices
Dinner: Salmon & Rice Casserole, Green Salad
To Do: Dehydrate Apples, Soak Porridge, Make Carrot-Apple Salad
Breakfast: Oatmeal or Teff Porridge, Eggs
Lunch: Cheese Slices, Green Salad with Nuts/Seeds, Bread/Crackers
Dinner: Sleeper Heater Lentil Soup, Bread & Butter, Carrot-Apple Salad
To Do: Order Milk, Thaw Ground Meat
