Menu Plan Monday

It’s about time for me to go grocery shopping again.  I’m using up pantry/freezer items this week, as well as plenty of leftovers.  

Breakfast: Leftover Porridge, Eggs
Lunch: Leftover Casserole/Soup, Sandwiches, Apple Slices
Dinner: Quesadillas on Homemade Tortillas, Green Salad
To Do: Make Tortillas, Bake Sourdough Bread, Make Salad Dressing, Thaw Chicken Broth
Breakfast: Carrot Apple Salad, Yogurt, Gingerbread Muffins (similar to these, but with different flours)
Lunch: Grilled Cheese Sandwiches, Green Salad
Dinner: Ground Beef Gyros, (I’m still deciding which Pita Recipe to choose), Green Beans
To Do: Soak Quinoa, Soak Kidney Beans, Boil Eggs, Thaw Salmon, Bake GF Chocolate Cake
Breakfast: Toast with Peanut Butter & Pear Jam
Lunch: Egg Salad Sandwiches, Apple Slices
Dinner: Kidney Bean & Quinoa Chili, GF Cornbread, Carrot Sticks
To Do: Soak Millet, Thaw Ground Turkey
Breakfast: GF Pancakes, Eggs
Lunch: Cheese & Lettuce Sandwiches, Apple Slices
Dinner: Baked Salmon, Millet, Carrot Sticks
To Do: Soak Pinto Beans, Soak Brown Rice
Breakfast: Omelets, Smoothies
Lunch: Leftovers
Dinner: Turkey & Vegetable Chili Verde, Brown Rice, Yogurt
To Do: Soak White Beans, Soak Pinto Beans for RMH Dinner, Make Butter, Bake GF Bread
Lunch: Tuscan Bean Salad, Leftover Cornbread, Carrot-Apple Salad
Dinner: Dijon Turkey Burgers, Green Salad, Baked Potatoes
To Do: Cook Pinto Beans for RMH Dinner, Soak Porridge, Make Crackers
Breakfast: Oat or Teff Porridge, Peanut Butter
Lunch: Cheese Slices, Bread & Butter, Apple Slices, Popcorn
Dinner: Waffles, Eggs
To Do: Order Milk, Soak Lentils
