Menu Plan Monday


During our market shopping today, we picked up a fun assortment of fall produce!  I have a huge (22.35 lbs) white pumpkin to make into pumpkin butter, some apples to make into applesauce, a large spaghetti squash, and some leeks.  (I have especially been anticipating the spaghetti squash for months!)  We’re also looking forward to our “Date Night” at home on Saturday, with homemade pizza and a Scrabble game.  

Monday

Breakfast: Toast with Pear Jam & Cream Cheese, Eggs
Lunch: Leftovers, Apple
Dinner: Lentil Curry Soup (add some curry)Coconut BiscuitsYogurt, Green Salad
To Do: Soak Pancake Batter, Soak Quinoa, Thaw Ground Meat
Tuesday
Breakfast: GF Pancakes, Eggs
Lunch: Quinoa Tabbouli, Apple Slices with Peanut Butter
To Do: Make Crackers, Soak Scone Batter
Wednesday
Breakfast: GF Lemon Scones (with some different flours), Kale Omelets
Lunch: Salmon Salad Sandwiches, Apple Slices
To Do: Make Butter, Pick Up Milk, Make Pumpkin Butter, Soak Black Beans, Soak Pumpkin Seeds
Thursday
Breakfast: Herbed Cream Cheese Omelets, Melon, Toast
Lunch: Black Bean Tacos with Homemade Corn Tortillas, Carrot Sticks
Dinner: Leek & Yogurt Quiche, Apple Slices
To Do: Make GF Bread, Make Carrot-Apple Salad, Roast Pumpkin Seeds
Friday
Breakfast: Carrot Apple Salad with Yogurt, Toast
Lunch: Peanut Butter & Jam Sandwiches, Melon
Dinner: Spaghetti Squash with Heirloom Tomatoes, Green Salad
To Do: Thaw Ground Turkey, Make Applesauce, Soak Beans
Saturday
Breakfast: Scrumptious Scones, Eggs
Lunch: Mexican Chef Salad (similar to this),  Leftover Biscuits/Scones
Dinner: Homemade Pizza (topped with Chicken Sausage, Apples, Walnuts, & Jack Cheese), Carrot Sticks
To Do: Make Sourdough Bread, Soak Millet
Sunday
Breakfast: Oat or Teff Porridge with Dried Fruit, Eggs
Lunch: Popcorn, Cheese Slices, Apple Slices, Carrot Sticks & Peanut Butter
Dinner: Dijon Turkey Burgers, Millet, Green Salad
To Do: Bake Sourdough Bread, Make Mayonnaise, Order Milk
