Menu Plan Monday

I’m guessing that we will be busy packing for our move during most of the week, so I have lots of quick, easy meals planned (such as roasting a chicken, and then just eating from that during the week).  We are really enjoying the seasonal fall produce, as well!  The Farmer’s Market was gorgeous today; filled with fresh greens, and a huge variety of apples and squash.  Yum! 


Lunch: Peanut Butter & Jam Sandwiches, Carrot/Celery Sticks
Dinner: Roast Chicken, Steamed Sesame Kale, Coconut Biscuits
To Do: Thaw Tomato Sauce, Make Mayonnaise, Thaw Ground Turkey, Soak Beans
Lunch: Cheese Sandwiches, Carrot Salad
Dinner: Vegan Baked Beans, Bread & Butter, Green Beans
To Do: Make Chicken Stock, Soak Millet, Boil Eggs, Make Butter
Breakfast: Breakfast Millet with Dried Fruit, Yogurt
Lunch: Egg Salad Sandwiches, Carrot/Celery Sticks
Dinner: Chicken-Stuffed Crepes, Baked Sweet Potatoes
To Do: Soak Rice, Soak Lentils, Pick Up Milk, Make Breakfast Sausage, Soak Quinoa
Breakfast: Warm & Nutty Cinnamon Quinoa, Homemade Turkey Breakfast Sausage
Lunch: Kale & Cheese Omelets, Chicken/Apple/Celery Salad
Dinner: Lentil Curry (add carrots), Yogurt, Brown Rice
To Do: Bake GF Bread, Soak Waffle Batter, Make Chocolate Chips
Breakfast: Surprise Waffles, Eggs 
Lunch: Cheese Sandwiches, Apple Slices
Dinner: Baked Stuffed Squash (with homemade ground turkey sausage), Green Beans
To Do: Make Sourdough Bread
Lunch: Peanut Butter & Jam Sandwiches, Carrot/Celery Sticks
Dinner: Chicken Stir-Fry, Leftover Brown Rice
To Do: Soak Porridge, Bake Sourdough Bread
Breakfast: Oat or Teff Porridge with Dried Fruit, Eggs
Lunch: Cheese Slices, Apple Slices w/Peanut Butter, Popcorn
Dinner: Curried Butternut Squash Soup, Yogurt, GF Irish Soda Bread, Kefir Apple Cider
To Do: Order Milk, Thaw Ground Meat
