Breakfast Sausage
1 lb ground organic turkey or beef
1 small sweet onion, finely chopped (or minced green onion/chives)
1 egg, lightly beaten
2 Tbl real, organic maple syrup or dark brown sugar
2 tsp sea salt
1/2 tsp dried sage
1/2 tsp cinnamon
1/2 tsp dried parsley
1/2 tsp powdered ginger
1/2 tsp minced garlic
1/4 tsp nutmeg
1/4 tsp freshly ground black pepper
dash of cayenne pepper
2 Tbl. butter
Variation: Add approximately 1/4 cup diced apple.
Mix all ingredients (except butter) together well, and form into patties. Saute patties in butter on med. heat, until browned and cooked through. Serve warm, or freeze/refrigerate for later use.
If using in a recipe calling for bulk sausage, do not form into patties; just mix up all ingredients, and add according to recipe directions. (This is delicious in stuffed squash!) I often make half of the recipe into breakfast patties, and use the other half for stuffing an acorn squash.

I made the breakfast sausage today, and it was delicious, but it turned out quite salty….even for me and I LOVE real salt! Right now I’m using Himalayan salt (I alternate between this kind and Celtic grey sea salt). I wonder if somehow it’s saltier than some kinds of real salt? I think that 1 tsp of salt would have been plenty, in my case. What kind of salt do you typically use?
