Menu Plan Monday

Soon after we woke up this morning, the snow started falling!  We got an amazing snowfall (for our area), as it continued through most of the day (along with blustery cold wind blowing, too!).  We will probably be staying close to home in the near future, and not venturing out for groceries.  

We had a lovely day today with a dear friend, making a big pot of pumpkin curry together, and popping popcorn while watching the snow fall outside.  She gifted us with the other half of the large pumpkin, so that is roasting in the oven right now, to use in recipes this week.  Butter is also being made (in the mixer).  
(Sunday) To Do: Soak Beans, Soak Pancake Batter
Monday
Breakfast: GF Pancakes, Eggs
Dinner: Kale & White Bean Gratin (from Whole Foods Market Cookbook), Bread & Butter, Orange Slices
To Do: Bake GF Bread, Thaw Beef
Tuesday
Lunch: Peanut Butter Sandwiches, Spinach & Orange Salad
To Do: Soak Brown Rice, Soak Porridge, Thaw Chicken
Wednesday
Breakfast: Oat or Buckwheat Porridge, Peanut Butter
Lunch: Egg Salad Sandwiches, Leftover Carrot Salad
Dinner: Salmon & Rice Casserole, Sauteed Green Beans
To Do: Soak Lentils, Pick Up Milk
Thursday
Breakfast: Pumpkin Muffins, Eggs
Lunch: Cheese-Stuffed Potatoes (page 43), Orange Slices
Dinner: Lentils & Greens Soup, Yogurt, Bread & Butter
To Do: Soak Millet
Friday
Breakfast: Leftover Muffins, Eggs
Lunch: Peanut Butter Sandwiches, Orange Slices
Dinner: Roast Chicken, Florentine Salad (substitute Millet instead of spaghetti)
To Do: Soak Waffle Batter, Make Butter
Saturday
Breakfast: Surprise Waffles, Eggs, Orange Slices
Lunch: Leftovers, Carrot Sticks
Dinner: Salmon-Rice Patties (use leftover salmon & rice), Green Salad
To Do: Soak Porridge, Make Buttermilk Salad Dressing, Make Sourdough Bread
Sunday
Breakfast: Oat or Buckwheat Porridge, Eggs
Lunch: Cheese Slices, Orange Slices, Popcorn, Carrot Sticks
Dinner: Chicken Crepes, Green Salad
To Do: Bake Sourdough Bread
