Menu Plan Monday

I’m keeping things easy this week, so the menu has lots of sandwiches and finger foods, as well as some warm soups.  Yum!  I’m sticking with mostly pantry staples this week, to avoid the grocery store as much as possible.  

(Sunday) To Do: Soak Beans, Thaw Chicken

Monday

Breakfast: Apple Omelets, Yogurt
Lunch: Cheese Sandwiches, Carrot Sticks
Dinner: Baked Potatoes with Black Beans & Cheese, Steamed Sesame Greens, Orange Slices
To Do: Make Mayonnaise, Thaw Zucchini, Make Sourdough Bread, Thaw Chicken Broth
Tuesday
Breakfast: Carrot-Zucchini Muffins, Eggs
Lunch: Peanut Butter Sandwiches, Orange Slices
Dinner: Roasted Lemon Herb Chicken, Leftover Brown Rice, Spinach Salad
To Do: Bake Sourdough Bread, Make Peanut Butter Balls, Make Butter
Wednesday- New Year’s Eve
Breakfast: Leftover Muffins, Eggs
Lunch: Leftover Minestrone Soup, Bread & Butter, Orange Slices
Dinner: (Finger Food Buffet) Grilled Chicken Sausage, Veggies & Yogurt Herb Dip, Baked Potato Chips, Apple Slices, Deviled Eggs, Sparkling Cider, Peanut Butter Balls
To Do: Make Tortillas, Make Chicken Stock
Thursday
Breakfast: Leftover Muffins, Eggs
Lunch: Fish Salad Sandwiches, Orange Slices
Dinner: Chicken-Apple Quesadillas with Peanut Sauce on Homemade Corn Tortillas, Carrot Sticks
To Do: Soak Pancake Batter, Soak White Beans
Friday
Breakfast: Pancakes, Peanut Butter
Lunch: Egg Salad Sandwiches, Carrot-Apple Salad
Dinner: White Bean Soup (omit ham), Bread & Butter, Orange Slices
To Do: Make Italian Dressing, Thaw & Marinate Green Beans, Soak Millet
Saturday
Breakfast: Surprise Waffles, Eggs
Lunch: Potluck with family: Take Green Bean Salad (& GF munchies for me)
Dinner: Skillet Millet & Cheese (similar to this recipe; substitute millet for macaroni), Steamed Greens
To Do: Soak Porridge
Sunday
Breakfast: Oat or Buckwheat Porridge with Peanut Butter & Raisins
Lunch: Cheese Slices, Apple Slices, Popcorn
Dinner: Spinach Omelettes, Bread & Butter, Orange Slices
