Menu Plan Monday

It’s looking like this week is going to be pretty busy, so I’m keeping things simple. I restocked the pantry this weekend, which is helpful! :)  I’m planning plenty of easy meals, along with using leftovers. 


Monday
Breakfast: Eggs, Toast
Lunch: Leftover Shepherd’s Pie, Half Cheese Sandwich, Apples/Oranges
Dinner: Roast Chicken, Steamed Sesame Spinach, Leftover Brown Rice
To Do: Soak Porridge, Soak Millet
Tuesday
Breakfast: Porridge, Eggs
Lunch: Peanut Butter & Jam Sandwiches, Apples/Oranges
Dinner: Lentil/Veggie Dal, Millet, Yogurt
To Do: Soak Rice, Soak Waffle Batter, Thaw Ground Beef
Wednesday
Breakfast: Surprise Waffles, Eggs
Lunch: Salmon/Rice Casserole, Carrot-Apple Salad
Dinner: Corn Hotcakes, Taco Salad, Yogurt
To Do: Make Chicken Stock, Soak Black Beans, Start Sprouting Sunflower Seeds
Thursday
Breakfast: Ginger Molasses Muffins, Eggs
Lunch: Roasted Sweet Potatoes with Cheese & Black Beans, Yogurt, Bread & Butter
Dinner: Homemade Pizzas (use leftover chicken), Spinach
To Do: Thaw Ground Meat, Make Deviled Eggs
Friday
Breakfast: Leftover Muffins, Eggs
Lunch: Salmon Salad Sandwiches, Carrot-Apple Salad
Dinner: Apple Burgers, Leftover Corn Cakes, Spinach
To Do: Bake Blueberry Muffins
Saturday
Breakfast: Apple Omelets, Toast
Lunch: Peanut Butter & Jam Sandwiches, Carrot Sticks
Dinner: Cheese-Stuffed Potatoes (page 43), Sprouted Sunflower Seeds, Spinach, Blueberry Muffins
To Do: Soak Porridge
Sunday
Breakfast: Oat or Buckwheat Porridge, Eggs
Lunch: Toasted Cheese Sandwiches, Carrot Sticks
Dinner: French Toast, Yogurt, Home-Canned Peaches
