Menu Plan Monday

I’m moving a few things to this week’s meal plan that we didn’t get to last week.  We’ve been juggling a sick little one these past couple days, too, as Gen is fighting off a sinus cold.  Along with that, I’m still having the pregnancy nausea/fatigue pretty often, and focusing on keeping up my protein intake. 


Breakfast: Spinach Omelets, Toast
Lunch: Leftovers, Apple/Orange Slices
Dinner: Seven-Layer Salad, Coconut Honey Muffins (thanks, Carrie!), Flourless Peanut Butter Cookies
To Do: Soak Porridge
Breakfast: Oat or Buckwheat Porridge, Eggs
Lunch: Cheese Sandwiches, Carrot-Apple Salad
Dinner: Roast Chicken, GF Focaccia Bread, Leftover Layered Salad
To Do: Thaw Ground Meat
Breakfast: GF Pancakes, Eggs
Lunch: Chicken Apple Walnut Salad, Bread, Apple/Orange Slices
Dinner: Pad Thai w/Shrimp & Veggies
To Do: Make Applesauce, Make Sourdough Bread, Soak Brown Rice
Breakfast: Surprise Waffles, Eggs
Lunch: Cheese Sandwiches, Apple Slices
Dinner: Meatballs, Sweet & Sour Sauce, Brown Rice, Green Salad
To Do: Make Chicken Stock, Bake Sourdough Bread, Soak Beans, Soak Millet, Soak Quinoa
Lunch: Peanut Butter Sandwiches, Carrot Sticks
Dinner: Millet Chili, Yogurt, Green Salad
Breakfast: Morning Rice (use leftover brown rice), Eggs
Lunch: Leftovers
To Do: Soak Porridge, Thaw Berries
Breakfast: Oat or Buckwheat Porridge, Eggs
Lunch: Cheese Slices, Apple Slices, Carrot Sticks, Bread & Butter
Dinner: French Toast, Yogurt, Berries (from freezer)

By the way, in case you’re wondering what happened- my previous blog template background went defunct, much to my disappointment. (Oh, how I loved that red & olive paisley print!)  I quickly tossed on another background, which I hope is readable for now!
