Bargain Meal of the Week


Welcome to another week of bargain meals! I was really excited to see the New Season Market ad this week, since some of the sale items matched with coupons on hand. Plus, there is a perfect combination of sale items for some of our family’s favorite meals. I had planned on not going to the grocery store during this busy week, but I may need to schedule a trip to do some stocking up!

This week, I was able to put together two easy, delicious meals.

Vietnam Fried Rice with Satay Sauce
I’m starting out with Lindsay’s recipe for Vietnam Fried Rice. Then, I’m topping it with a peanut Satay Sauce (cut this abundant sauce recipe in half).

Vietnam Fried Rice
1/2 lb ground beef (on sale for $2.99/lb) = $1.49
3 cloves garlic, minced = $0.06
1 large onion, chopped = $0.79 (split between the rice and sauce recipes)
1 t. salt
1 t. pepper
1 Tbls. or more Tamari (on sale for $2.50/10oz) = $0.13
1 cup uncooked Brown Rice (on sale for $3.99/32 oz) = $0.50
1 lb. Carrots, sliced/diced; saute with the meat/onions to cook (on sale for $0.59/lb) = $0.59
2 Eggs (on sale for $1.50/dozen) = $0.25

Cook up as directed in the recipe, and then serve topped with the Satay Sauce.

Satay Sauce
1/2 can Coconut Milk (on sale for $1.25/can) = $0.62
1/4 cup crunchy Peanut Butter (Maranatha* on sale for $2.50 + I had a $1.00 off coupon) = $0.19
1/4 small onion, grated (just use some of the onion set aside from the rice recipe)
1-1/2 teaspoons dark Soy Sauce (Tamari is on sale for $2.50/10 oz) = $0.07
1 teaspoon Brown Sugar = $0.06
1/4 teaspoon Red Pepper Flakes

Prepare according to sauce recipe, and serve over the fried rice.

Total Cost: $4.75 for 4 servings
*Note: Maranatha is not part of the recent recall, and is a safe & delicious choice for peanut butter! It is also distributed locally, out of Ashland, Oregon.

Pasta Bake
To create another quick basic meal, the makings for a very kid-friendly (or a sensitive pregnant tummy!) were found for Pasta Bake. (I cut the recipe in half to make 4 servings, shown below.)

4 ounces Pasta (Bionaturae on sale for $2.50/16 oz) = $0.63
1/2 pound lean Ground Beef (on sale for $2.99/lb) = $1.49
1/2 Onion, chopped = $0.40
1/2 (4 ounce) can Mushrooms, drained = $0.49
1 (28 ounce) jar Spaghetti Sauce (Muir Glen on sale for $2.50/jar + $1.00 off coupon) = $0.75
2 cups shredded Mozzarella Cheese (or Jack or Cheddar) (Tillamook Cheddar on sale for $5.99/2 lbs) = $0.74

Bake according to recipe directions, and serve with carrot sticks.

1 lb. Carrots (on sale for $0.59) = $0.59

Total Cost: $5.09 for 4 servings
