I’m Back!

After a lovely extended weekend visiting family and friends, I’m starting to get back into the swing of things here at home. There are quite a few things that need catching up on (laundry & dishes!), but I know everything will go much smoother if I get a meal plan in place.

I’ve been adding to this menu throughout the day, trying to get it done. :) The charger for the computer has been fickle since a certain toddler chewed on it, but is getting the job done today, thankfully!
I’m using pantry/freezer stockpile items this week, and avoiding a trip to the grocery store during a busy week. My co-op order arrived on Thursday night, so I have restocked some basic staples (such as gluten-free flours, a case of apples, and a case of coconut milk).  
Over the next month, I’ll be sharing more about our trip, as well as some new changes going on, and answering some reader questions from my e-mail box, so make sure not to miss a post! To Do: Make Mayonnaise, Soak Porridge
  • Breakfast: Oat or Buckwheat Porridge, Eggs
  • Lunch: Peanut Butter Sandwiches, Apple Slices, Carrot Sticks
  • Dinner: Baked Polenta with Homemade Marinara, Steamed Veggies (something from freezer)
To Do: Thaw Bread

  • Breakfast: Leftover Minute Muffins, Eggs
  • Lunch: Cheese Sandwiches, Apple Slices
  • Dinner: Leftover Brown Rice, Scallion Eggs, Orange Slices, Carrot Sticks
To Do: Soak Porridge, Thaw Beef, Soak Lentils
