Nourishing Chocolate Carnival: Chicken Mole


Just in time for Valentine’s Day, Kimi at the Nourishing Gourmet is hosting the “Nourishing Chocolate Carnival!” Yum.

I had originally planned on preparing one of our favorite dishes for the holiday, of quick Chicken Mole, from our Whole Foods Market Cookbook. Unfortunately, I forgot to place my co-op order last month (which would have included chickens). So, we’re doing homemade pizza instead. But I still wanted to share this delicious recipe with you! (And yes, it does pertain to this carnival; one of the essential ingredients in Mole is Cocoa Powder!)

I begin with the quick Whole Foods Chicken Mole recipe. I usually cut up a whole fryer chicken, instead of purchasing chicken breasts. This is especially delicious if you let it simmer for hours! I use a homemade chicken bone broth, instead of purchasing a can of broth, and home-canned tomatoes. We enjoy serving this alongside rice and/or in tortillas.

The flavors in this romantic dish are incredible. During our first year of marriage, I cooked up a big pot of Chicken Mole, and froze containers of it, for quick meals. Now the smell of Mole reminds me of those newlywed days… perfect for Valentine’s Day!
