Bargain Meal of the Week


Since St. Patrick’s Day is coming up, our local New Seasons Market is offering the ingredients for the traditional “Americanized” version of Irish foods in their weekly ad- namely, corned beef, cabbage, and red potatoes!
This week’s recipe is a filling one-pot meal; perfect for a holiday “comfort food” type of dinner. In comparing prices with other local natural food stores, I’ve noticed that corned beef can be a fairly expensive meal choice. This recipe allows you to “stretch” the meat for a more frugal meal (purchasing only 1/2 a lb!).

St. Patrick’s Colcannon
(I cut the recipe in half for four servings.)
1-1/2 lbs Red Potatoes (on sale for $0.99/lb) = $1.49
1/2 head Cabbage (on sale for $0.59/lb) = $0.53
1 Tbl. Butter (I omitted this extra butter, and just used some of of the 1/4 cup)
1/4 cup Butter = $0.75
1/2 tsp. minced Garlic = $0.06
2 Green Onions = $0.09
White Pepper to taste
1/2 cup hot Milk (organic) = $0.32
1/2 lb. leftover Corned Beef (on sale for $4.99/lb) = $2.49

Total Cost: $5.73 (for four servings)

Prepare according to recipe directions, and make sure to be wearing your green! :)
