Menu Plan Monday: Moving Week


Honestly, I don’t really LIKE doing a menu plan (although I do like the actual cooking part!). (Just to clear that up; since I make a plan every week, you might think I do it for fun.) It sounds much more fabulously fun to just grab whatever sounds good from the refrigerator and munch away.

But I’ve realized, that if I don’t actually plan for something to be IN the refrigerator, the pickings are rather slim (oh, plus that lettuce wilting in the corner- ‘forgotten’ again). In the long run, my menu plan helps make sure we have good meals for our family everyday, and I can avoid waste by using up leftovers, produce, etc. Having a meal plan actually makes the week go so much smoother without those “Quick, it’s 5:00 and I still don’t know what to make for dinner; and something smells weird in the fridge again!” moments. 
But MOVING and meal planning? Ugh. My least favorite season. (Like, will we have any dishes to cook/eat with?)  It’s definitely a week where I need to be conscious of what we have available for quick, easy meals- along with the challenge of staying gluten-free. During times when I need to be focusing on packing boxes, I don’t want to be spending a lot of time on meal preparation. So, here is my attempt at a plan. 
I have a SPUD order in for the week, so that we will have some basic groceries during our first few days in our new home. (I’ll likely be without a car to run to the store, so I’m trying to be prepared.)  I’m sure looking forward to cooking in our new sunny kitchen, though! 
To Do: Soak Lentils, Thaw Beef
Monday
To Do: Soak Brown Rice, Cut up big batch of Carrot Sticks

Tuesday
To Do: Thaw Ground Beef
Wednesday
  • Breakfast: Eggs, Toast
  • Lunch: Cheese Sandwiches, Carrot Sticks
  • Dinner: Nacho Spuds (Thanks, Tiffany!), Home-canned Peaches
To Do: Soak Porridge, Pay/Pick Up Milk
Thursday
  • Breakfast: Oat or Buckwheat Porridge with Dried Fruit, Eggs
  • Lunch: Peanut Butter Sandwiches, Carrot Sticks
  • Dinner: Taco Salad (with homemade dressing), Bread & Butter (instead of chips)
To Do: Cook extra meat for Friday’s dinner
Friday
Saturday
To Do: Soak Porridge, Make Salad Dressing
Sunday
  • Breakfast: Oat or Buckwheat Porridge, Eggs
  • Lunch: Cheese Slices, Popcorn or Bread & Butter, Carrot Sticks
  • Dinner: Apple & Ham Crepes, Green Salad
