Bargain Meal of the Week


Each week, I post a Bargain Meal idea, based on our local New Seasons Market ad of the week. This meal is a simple chicken dinner, with little clean-up afterward. (Sale prices are in red.)

Easy Italian Chicken
(I cut the recipe in half to serve 4.)
4 Chicken Legs, halved –I calculated using 8 Chicken Drumsticks; with the sale price, it’s cheaper than buying & cutting whole legs, and easier!(Drumsticks on sale for $1.59/lb) = $3.84
2 cloves Garlic = $0.03
1-1/2 teaspoons crushed red pepper flakes (Simply Organic on sale for $3.49/2.39 oz) = $0.41
1-1/2 teaspoons vegetable oil (Hain Sunflower or Safflower Oils on sale for $6.99/32 oz) = $0.05
Salt to taste
1/4 cup Water

Prepare according to recipe directions. Serve with baked/fried potatoes and a choice of fruit or vegetable on the side. (For simple clean-up, after you’re done cooking the chicken, you can fry up potato slices in the same pan. Use a bit of oil or water to prevent sticking, and sprinkle on some salt & pepper.) 

Serving Options:

4 Baked/Fried Potatoes (buy the 5 lb bag) = $0.95

Organic Oranges and Apples are on sale this week for $0.99/lb. Bulk organic Carrots are regularly priced at $0.99/lb. Choose a half pound of your favorite produce item (or a combination!), and cut into slices to round out the meal. = $0.49

Total Cost: $5.77 (for four servings)
