Each week, I post a Bargain Meal idea, based on our local New Seasons Market ad of the week. This week, they have plenty of “Mexican” foods on sale, along with a salsa tasting over the weekend. A vegetarian quesadilla recipe seemed like the perfect choice for dinner! (Sale prices are shown in red.)

1 teaspoon Olive Oil = $0.26
1/3 Onion, finely diced = $0.26
2/3 clove Garlic, minced = $0.04
1 entire (15 ounce) can Black Beans, rinsed and drained (Westbrae on sale for $1.50/can) = $1.50 (increased in amount from original recipe)
1/3 Green Bell Pepper, chopped = $0.50
2/3 Tomatoes, chopped (Organic Romas on sale for $1.49/lb) = $0.50
1/8 (10 ounce) package frozen Corn (Organic Sno-Pac on sale for $1.99/10 oz) = $0.25
8 Sprouted Corn Tortillas (Food for Life on sale for $2.19/pkg) = $1.46 (adjusted from original recipe)
1/3 cup shredded Cheddar Cheese (Organic Valley shredded cheese on sale for $3.99/6 oz + $1.00 off coupon) = $0.66
Prepare according to original recipe instructions. Serve with a side of fruit.
1/2 lb Apples, sliced (Organic Braeburns on sale for $0.99/lb) = $0.49
Total Cost: $5.17 (for four servings)
