Each week, I post a Bargain Meal idea, based on our local New Seasons Market ad of the week. For Easter week, they are offering plenty of delicious brunch options in their ad; perfect for using up leftovers from Easter dinner, or for a festive way to celebrate during the weekend!
Brunch-style meals also make simple “breakfast-for-dinner” meals. This week’s frugal meal of Migas with a side of fruit makes a quick and delicious alternative to the intensive time & ingredient lists of the traditional quiche!
I substituted bacon, which is on sale, instead of the ham, but if you have some leftover Easter ham, feel free to use that instead! I also like to snip off some of my homegrown potted chives to use in recipes like this: fresh & free! Sale items are marked in red.

6 Eggs (Steibers Cage Free on sale for $1.50/doz) = $0.75
1/4 cup Milk (organic) = $0.10
3 (6 inch) Corn Tortillas, coarsely chopped (Food For Life Sprouted Corn) = $0.75
1 tablespoon Butter (Tillamook on sale for $2.50/lb) = $0.08
1 tablespoon chopped Green Onion = $0.04
1/2 cup diced cooked Ham (Nitrite-Free Smoked Bacon on sale for $3.99/lb) = $0.74
Salt and Pepper to taste
Prepare according to recipe directions. Serve with a side of fruit (see suggestions below).
Total: $2.46 (for four servings)
Topped with 1/4 lb. Mushrooms, Sliced (Crimini on sale for $3.99/lb) = $0.99
Served with slices of Ruby Grapefruit (on sale for $0.99/lb) = $0.99
