Menu Plan Monday


We got back Sunday night from our trip pretty exhausted. But when I went to go work on the week’s menu plan this morning, the internet wasn’t working. It’s finally back on, so I’m just now getting my meal plan up. (I kind of considered not doing a plan this week, but I knew I would just end up frustrating myself!) :)

Monday
  • Breakfast: Eggs, Toast
  • Lunch: Cheese Sandwiches, Fruit
  • Dinner: Southwestern Skilet Bake (use GF biscuit recipe instead of Bisquick & homemade salsa), Green Salad
To Do: Thaw Chicken, Soak Lentils, Soak Rice, Soak Porridge
Tuesday
To Do: Prepare GF Matzo, Make Macaroons
Wednesday
To Do: Pick Up Milk, Soak Pancake Batter
Thursday
To Do: Soak Beans, Thaw Chicken, Make Hot Cross Buns (for Good Friday!), Make Yogurt
Friday
To Do: Soak Lentils, Thaw Cranberry Sauce, Make Lamb Bone Stock, Cook up Leftover Doughs from Passover
Saturday
  • Breakfast: Eggs, Toast
  • Lunch: Peanut Butter Sandwiches, Apple Slices
  • Dinner: Lentil Shepherd’s Pie, Green Salad
To Do: Soak Porridge
Sunday
  • Breakfast: Oat or Buckwheat Porridge, Eggs
  • Lunch: Cheese Slices, Bread & Butter (or Popcorn), Orange Slices
  • Dinner: (Easter Dinner for company) Lemon Chicken, Baked Yams, Cranberry Sauce, Bread with Butter & Homemade Jam, Green Salad with Homemade Dressing, Homemade Sun Tea, GF Cake
