Menu Plan Monday

I’m sure we’ll be supplementing occasional meals/snacks this week with the odds & ends leftovers from our Easter dinner. I also thawed out too much chicken, so I will be incorporating it more than usual this week, as well as grilling up most of it to pop back into the freezer (for a quick meal option in the future). 


  • Breakfast: GF Pancakes, Eggs, Fresh Carrot/Fruit Juice (from juicer)
  • Lunch: Peanut Butter Sandwiches, Apple Slices
  • Dinner: Roasted Potato Pizza Slices (use grilled chicken instead of pepperoni), Veggies (from freezer)
To Do: Make Sourdough Bread, Boil Eggs, Thaw Broth

To Do: Bake Sourdough Bread, Soak Brown Rice
  • Breakfast: Oat or Buckwheat Porridge, Eggs
  • Lunch: Cheese Sandwiches, Apple Slices
  • Dinner: Thai Coconut Soup (use leftover chicken instead of turkey), Veggie Fried Rice 
To Do: Soak Millet, Pick up Milk
  • Breakfast: Surprise Waffles, Eggs, Fresh Carrot/Fruit Juice (from juicer) 
  • Lunch: Cheese Sandwiches, Carrot Sticks
  • Dinner: Calvin making dinner (Maybe corn pancakes & apple omelets?)
  • Breakfast: GF Banana Bread (I found some really old bananas in the freezer!), Eggs
  • Lunch: Peanut Butter Sandwiches, Veggies/Fruit
  • Dinner: (Company for dinner) BBQ Salmon, Potato Salad, Veggie Sticks, Fruit Salad, Sun Tea, Cookies
To Do: Soak Porridge, Soak Lentils, Soak Brown Rice
  • Breakfast: Oat or Buckwheat Porridge, Eggs
  • Lunch: Cheese Slices, Popcorn, Leftovers, Fresh Fruit
  • Dinner: Salsa Lentils & Rice (use homemade salsa), Green Salad
