Menu Plan Monday


I’m getting ready to place my monthly co-op order for May’s groceries this week, and don’t really plan on doing much grocery shopping during the rest of April. We’ll be working mostly with what is already in our pantry/freezer/fridge. 

I’m returning to some of our “summer favorites” recipes this week, since warmer weather has arrived! (We were able to have a lovely outdoor BBQ supper on our back porch with friends last night, and had fun digging into the first big bowl of freshly-made potato salad of the season.) 

Monday
To Do: Soak Millet, Make Hummus
Tuesday
  • Breakfast: Breakfast Peach Millet (from Feeding the Whole Family) using home-canned Peaches, Eggs
  • Lunch: Hummus, Veggie Sticks, Bread & Butter, Yogurt
  • Dinner:  Baked Potatoes with Cheese & Guacamole, Orange Slices

To Do: Soak Quinoa, Soak Pancake Batter, Start Sprouting Seeds, Thaw Sausage, Co-Op Order Due

Wednesday
  • Breakfast: GF Pancakes, Yogurt & Berries (from freezer), Eggs
  • Lunch: Peanut Butter Sandwiches, Orange Slices
  • Dinner: Dijon Burgers, Quinoa, Green Salad with Homemade Dressing
To Do: Thaw Peas, Pick Up Milk
Thursday
  • Breakfast: Chai Muffins, Eggs
  • Lunch: Orange Smoothies (substitute fresh orange & yogurt instead of juice/milk; reduce sugar), Cheese Sandwiches
  • Dinner: Grilled Sausages, Pea Salad, Bread & Butter
To Do: Soak Granola, Soak Porridge, Soak Beans, Pick Up Co-op Order
Friday
To Do: Soak Black Beans, Bake Granola

Saturday
To Do: Soak Porridge
Sunday
  • Breakfast: Oat or Buckwheat Porridge, Peanut Butter
  • Lunch: Cheese Slices, Fruit, Bread & Butter, Carrot Sticks
  • Dinner: Omelets, Blueberry Honey Muffins
