Menu Plan Monday


We did our monthly grocery shopping for May this past week (mostly through our co-op order), so I’ve restocked the fridge/pantry/freezer with basic produce and dairy items. I also bought a big turkey, which I’ll be roasting, and then freezing portions of the cooked meat for later throughout the month.

We still have about another month to go until our neighborhood’s Farmer’s Market opens up, which I’m really looking forward to! I kept in mind that my next co-op order or two will likely involve freezer-meal prep as we get ready for baby, so I’m trying to work in that direction.

Our internet connection has been finicky lately, and it disappeared for most of the weekend. I put together a plan of basic meals by skimming over some of our old favorites that I’ve had jotted down in a cookbook (thus, no links this week, since I wasn’t able to browse my recipe bookmarks online).

Monday
Breakfast: Waffles, Eggs, fresh Carrot-Fruit Juice (from juicer)
Lunch: Peanut Butter Sandwiches, Fruit
Dinner: Baked Potatoes with Cottage Cheese & Sunflower Seeds, Green Salad with Homemade Dressing

To Do: Start Sprouting Seeds

Tuesday
Breakfast: Apple Omelets, Toast
Lunch: Cottage Cheese (or cheese sandwiches), Carrot-Apple Salad, Bread & Butter
Dinner: Roast Turkey, Veggies (from freezer), Coconut Bread

To Do: Make Mayonnaise, Soak Porridge, Thaw Meat, Soak Lentils

Wednesday
Breakfast: Oat or Buckwheat Porridge, Eggs
Lunch: Peanut Butter Sandwiches, Carrot Sticks
Dinner: Lentil Soup, Bread & Butter, Fruit, Yogurt

To Do: Soak Millet

Thursday
Breakfast: Eggs, Toast
Lunch: Turkey Sandwiches with Sprouts, Fruit
Dinner: Dijon Burgers, Millet, Carrot Sticks

To Do: Soak Pancake Batter, Soak Brown Rice, Make Turkey Stock

Friday
Breakfast: Pancakes, Eggs, fresh Carrot-Fruit Juice (from juicer)
Lunch: Spring Rolls with Homemade Peanut Sauce, Brown Rice
Dinner: Onion Cheese-less Quiche, Bread & Butter, Baked Apples

To Do: Thaw Zucchini, Thaw Berries, Make Fruit Leather

Saturday
Breakfast: Strawberry Pizza (with berries from freezer), Eggs
Lunch: Zucchini/Corn Cheese Pizza, Fruit
Dinner: Indonesian Fried Rice, Stir-Fry Veggies

To Do: Soak Porridge

Sunday
Breakfast: Oat or Buckwheat Porridge, Eggs
Lunch: Cheese Slices, Apple Slices, Popcorn
Dinner: Turkey Pot Pie, Orange Slices

To Do: Make Lentil Curry (from The Jumbo Vegetarian Cookbook) for a new mama & deliver
