Each week, I post a Bargain Meal idea, based on our local New Seasons Market ad of the week. Even if you don’t have a New Seasons near by you, these recipes can give you “quick & easy” meal ideas to stretch your budget.
This week’s meal of a simple pasta salad is perfect for a hot summer day, and is easily tossed together in minutes! There is no “real recipe” for this; just a few convenience items combined to create a light meal. (Sale items are shown in red.)
Shrimp Pasta Salad
1/2 lb cooked Bay Shrimp (Oregon Shrimp Meat on sale $3.99/lb) = $1.99
1 14.5 oz box pasta of your choice (Barilla Plus on sale $2.50/box) = $2.50 (Newspaper flyer coupons are often available for this brand, and there may be a possibility of receiving future coupons for this by signing up for their newsletter, too, which would lower the cost.)
1/2 cup Salad Dressing of your choice (Annie’s Naturals on sale $2.99/8 oz) = $1.49
Cook pasta according to box directions. Stir in shrimp and dressing. Mix well to combine. If you have any fresh herbs/salad greens growing, snip a few springs into the salad, too! You can likely lower the cost additionally, by making your own salad dressing instead of purchasing a bottled dressing. This is also a great recipe to toss in any cold leftover veggies from your refrigerator, such as peas, green beans, or tomatoes.
Serve with a pound of melon slices:
