Menu Plan Monday

Since Calvin worked all weekend, he’s planning a belated “Mother’s Day dinner party” for me on Monday. This coming weekend, we’re planning our annual beach trip with friends, so I’ll be working on preparations throughout the week (like homemade s’mores ingredients!). We’ll want a quick dinner when we return home on Sunday, so I figured we would just do an easy “breakfast for dinner” meal. 


  • Breakfast: Blueberry Breakfast Cake (half recipe), Eggs
  • Lunch: Peanut Butter Sandwiches, Apple Slices
  • Dinner: Calvin is cooking. :) 
To Do: Thaw Zucchini, Make Sourdough Bread
To Do: Thaw Turkey, Soak Beans, Bake Sourdough Bread
  • Breakfast: Oat or Buckwheat Porridge (from Nourishing Traditions), Eggs
  • Lunch: Peanut Butter Sandwiches, Apple Slices
  • Dinner: Bean Soup, Grated Cheese, Corn Bread
To Do: Soak Millet, Make GF Graham Crackers, Soak Quinoa
  • Breakfast: Eggs, Toast
  • Lunch: Cheese & Sprout Sandwiches, Apple Slices
  • Dinner: Honey Mustard Turkey (use pre-cooked turkey from freezer), Millet, Green Beans (from freezer)
To Do: Make Marshmallows, Thaw Sausages, Soak Beans, Cook Quinoa/Make Salad, Make Dressing
To Do: Soak Pancake Batter
  • Breakfast: GF Pancakes, Eggs
  • Lunch: Peanut Butter Sandwiches, Baked Apples (in campfire)
  • Dinner: Grilled Sausages, Quinoa & Veggie Salad with Homemade Dressing, S’Mores
  • Breakfast: Hot Rice Porridge, Eggs
  • Lunch: Cheese Sandwiches, Carrot Sticks
  • Dinner: Waffles, Yogurt, Fruit
