Menu Plan Monday


With the weather turning warmer here (forecasts are in the 80*’s), I’m trying to avoid turning on the oven as much as possible. We’re transitioning over to cold “salad-type” meals, and using the barbecue more. 

Since many of the meals are a “lighter fare,” we usually fill in the gaps with some good snacks like homemade trail mix (made with soaked/roasted nuts & seeds), cheese slices, veggie sticks, cottage cheese, yogurt, etc. 

I’ve also been working on stocking our freezer with meals for baby’s arrival this summer, so many things have been made in double-batches (I’ll post more on this later).  I’m trying to get most of the extra cooking done before the summer temperatures are too unbearable to be in the kitchen; especially while maneuvering around a big pregnant belly and a toddler underfoot! 

Monday
Breakfast: Waffles (make extra for freezer), Yogurt, Raspberries (from freezer), Carrot-Apple Juice (from juicer)

Lunch: Turkey Melt Sandwiches (with leftover turkey), Carrot Sticks
Dinner: Apple Burgers (on BBQ), Green Salad with Homemade Pesto Dressing, Bread & Butter, Watermelon
To Do: Soak Lentils, Soak Rice, Bake Muffins
Tuesday
Breakfast: Bacon-Cheese Frittata, Teff Muffins
Lunch: Cheese Sandwiches, Carrot-Apple Salad
Dinner: Curried Lentils/Spinach/Rice Casserole, Rhubarb-Applesauce
To Do: Soak Porridge, Steam & Freeze Carrots, Make Mayonnaise
Wednesday
Breakfast: Oat or Buckwheat Porridge (from Nourishing Traditions), Eggs
Lunch: Peanut Butter Sandwiches, Watermelon
Dinner: Onion Quiche, leftover Carrot-Apple Salad
To Do: Soak Rice, Pick Up/Order Milk, Thaw Sausages
Thursday
Breakfast: Toast, Eggs
Lunch: Cheese Sandwiches, Apple Slices
Dinner: Asian Lettuce Wraps (with lettuce from garden), Homemade Peanut Sauce, Brown Rice
To Do: Soak Pancake Batter, Soak Lentils, Make Butter
Friday
Breakfast: Pancakes, Peanut Butter, Carrot-Apple Juice (from juicer) 
Lunch: Egg Salad Sandwiches, Carrot Sticks
Dinner: Apple-Lentil Salad (from Simply in Season), Cottage Cheese, Bread & Butter, Smoothies
To Do: Soak Beans, Thaw Corn
Saturday
Lunch: Corn & Black Bean Salad, Bread & Butter, Cottage Cheese, Fruit
Dinner: Grilled Sausages, Garlic Bread, Carrots & Dip
To Do: Make Sourdough Bread (from Plenty), Soak Beans, Soak Quinoa, Soak Porridge
Sunday
Breakfast: Oat or Buckwheat Porridge, Eggs
Lunch: Cheese Slices, Apple Slices, Popcorn
Dinner: Garbanzo Bean-Quinoa Salad, Corn Bread, Cottage Cheese, Smoothies
To Do: Bake Sourdough Bread
