Each week, I post a Bargain Meal idea, based on our local New Seasons Market ad of the week. This week’s meal is a frugal vegetarian meal that is easily multiplied to feed a crowd. (We made a similar recipe last week for company, along with some more “nourishing” adjustments.) Sale prices are in red.

Fantastic Green Rice Dish
1 cup uncooked Rice; I use brown rice, and cook ahead with this recipe (Lundberg Bulk Rice on sale $1.99/lb) = $0.79
1/2 cup shredded Cheddar Cheese (Tillamook Cheddar on sale $5.99/2 lbs) = $0.32
1 small Onion, grated = $0.79
2 Eggs, beaten (Chino Valley Veg-A-Fed on sale $2.59/doz) = $0.43
1/4 cup Butter, softened (Rose Valley on sale $4.49/lb) = $0.56
1 cup fresh Parsley (I use Spinach; on sale $1.50/bunch) = $1.50
1 1/2 cups Milk (Organic Valley on sale $2.99/half gallon + $1.00 off coupon in Mambo Sprouts booklet) = $0.37
Salt & Pepper, to taste (or a few dashes of Tamari)
Prepare according to original recipe directions. We have also added in some curry powder and cooked lentils for a different flavor and additional nutrients.
Cost: $4.76 (for five servings)
Total Cost: $5.25
Serve with 1/2 lb Carrots, cut into sticks = $0.49
