Each week, I post a Bargain Meal idea, based on our local New Seasons Market ad of the week. Even if you don’t have a New Seasons near by you, these recipes can give you “quick & easy” meal ideas to stretch your budget.
This week’s meal is based on a “California favorite.” One summer, I traveled to visit family in California, and we regularly enjoyed the refreshing flavors of Mexican food. One popular summer item on the restaurant menus was “Fish Tacos.” This recipe is a simplified, frugal version of that summer treat.
This is a very basic recipe, using sale items, and common herb garden ingredients. Feel free to “dress it up” with any additional garden produce you may have! Tomatoes, avocados, bell peppers, red onions, etc. are all delicious as diced toppings! You can likely reduce the cost further by making the tortillas yourself. (yummy!) If you have any leftover black beans sitting in the fridge, those are a fun addition, as well. Sale items are in red.
Grilled Fish Tacos
3/4 lb. White Fish (Dover Sole fillets on sale $4.99/lb) = $3.74
4 oz. Plain Yogurt (Nancy’s on sale $0.69/8 oz) = $0.34
2 cups shredded green or red Cabbage (Organic Green Cabbage on sale $0.79/lb) = $0.35
3 Tbl. Lime Juice (or juice of 1 lime) = $0.25
4 Corn (or flour) Tortillas = $0.40
1 oz Olive Oil = $0.35
Salt & Pepper
Dash of Cumin
Diced Cilantro (free from the garden!)
Minced Chives (free from the garden!)
1/2 Jalapeño Pepper, diced = $0.25 (optional)
Brush fish fillets with olive oil, and season with a sprinkle of salt, pepper, and cumin. Grill until done (these thin fillets don’t take long!). You can grill them in foil to prevent sticking to the grill, or cook them on a non-stick grill pan (such as a “George Foreman” grill).
Stir lime juice into the shredded cabbage until well-mixed. Season with salt & pepper. Mix in some diced herbs, and additional cumin (if desired; to taste).
Assemble tacos: add fish and cabbage to each tortilla. Top with yogurt, jalapeño, and diced herbs (and any other additions). Serve with additional lime juice and/or hot sauce if desired.
