Menu Plan Monday

My co-op order arrived this past week, and I’m hoping the large turkey I ordered will be thawed out in the next few days. I plan on roasting it, and then freezing most of the meat in batches for future meals. I also make stock from the bones, which is delicious for quick soups.

The weather is getting warmer, and I’m getting a bit more tired, so we’ll be having pretty simple meals which are easy on time and the budget! I made a big batch of soaked granola over the weekend, so that Calvin will have something hearty to munch on. (It’s not gluten-free, so I won’t be eating it.) I also made a big batch of Lentil Snacks


  • Breakfast: Eggs, Pumpkin Bread
  • Lunch: Chef Salad, Popcorn, Watermelon, Pickles
  • Dinner: Chorizo Salad (similar to this recipe, but use millet), Carrot Sticks & Dip

To Do: Make Mayonnaise, Make Sourdough Bread, Thaw Chicken Stock


  • Breakfast: Yogurt with Homemade Granola or GF Muesli
  • Lunch: Cottage Cheese, Bread & Butter, Carrot/Celery Sticks, Pickles, Leftovers
  • Dinner: Cheese & Chive Omelets, Bread & Butter, Watermelon

To Do: Make GF Bread


  • Breakfast: Millet with fruit/jam (use leftover millet), Eggs
  • Lunch: Cheese Sandwiches, Watermelon
  • Dinner: Roast Turkey, Potatoes, Green Salad

To Do: Pick Up Milk, Soak Beans


To Do: Make Turkey Broth, Soak Rice, Make Butter


To Do: Soak Beans


  • Breakfast: Eggs, Toast or Granola
  • Lunch: Red Bean Tacos with Homemade Corn Tortillas, Yogurt, & Lettuce, Carrot/Celery Sticks
  • Dinner: Honey Mustard Turkey, leftover Brown Rice, Strawberries

To Do: Soak Porridge


  • Breakfast: Oat or Buckwheat Porridge or Granola, Eggs
  • Lunch: Cheese Slices, Popcorn, Carrot Sticks
  • Dinner: Creamy Veggie Wraps (with leftover tortillas), Watermelon
