Menu Plan Monday


After roasting a turkey last week, it’s been nice not having to do much cooking. We froze most of the meat for easy meals. (I try to do this every couple months or so.)  With the weather forecast showing temperatures in the 80’s-90’s later this week, I’m planning on avoiding the oven as much as possible!

I was able to find organic strawberries for 99 cents/lb and a 2 lb bag of organic carrots for 75 cents at a local produce/herb store yesterday, when we went to pick up some homeopathics/herbs. (I’m relying on picked strawberries this summer; if I tried to do U-pick, I’m sure I’d fall right over with this growing pregnant belly!) :) 

Calvin was also able to bring home some leftover tomatoes and onions after a BBQ at work. Plus, we’re still enjoying the abundant red leaf lettuce from our garden, too!

Monday

  • Breakfast: Eggs, Toast
  • Lunch: Peanut Butter Sandwiches, Strawberries
  • Dinner: Turkey-Veggie Soup, Bread & Butter

To Do: Make GF Bread, Soak Nuts/Seeds, Soak Beans

Tuesday

To Do: Roast Nuts/Seeds, Thaw Turkey, Soak Pancake Batter

Wednesday

To Do: Bake Sourdough Bread, Soak Beans

Thursday

To Do: Soak Rice

Friday

  • Breakfast: Granola or GF Muesli, Eggs
  • Lunch: Cheese Sandwiches, Watermelon
  • Dinner: Turkey Salad Lettuce Wraps (adapted from a recipe here), Brown Rice, Carrot/Celery Sticks

Saturday

  • Breakfast: Eggs, Toast
  • Lunch: Salmon Salad Sandwiches, Watermelon
  • Dinner: Skillet Tortilla Pizzas (use leftover tortillas), Green Salad with homemade Dressing

To Do: Soak Porridge

Sunday

  • Breakfast: Oat or Buckwheat Porridge, Peanut Butter
  • Lunch: Cheese Sandwiches, Watermelon
  • Dinner: Herbed Cream Cheese Omelets, Bread & Butter, Carrot/Celery Sticks
