Bargain Meal of the Week: Creamy Mexi-Pasta Salad


Each week, I post a Bargain Meal idea, based on our local New Seasons Market ad of the week. Even if you don’t have a New Seasons near by you, these recipes can give you “quick & easy” meal ideas to stretch your budget.

With the heat wave that is going through here this week, a quick pasta salad sounds like a delightful meal option! I hardly ever buy pastas, but occasionally I do enjoy a brown rice or quinoa pasta. (Quinoa is especially rich in protein.)

This week’s vegetarian Creamy Mexi-Pasta Salad with a side of fresh fruit is quick to toss together, and a fun meal reminiscent of mac & cheese, but without the cheese! Sale items are marked in red.

Creamy Mexi-Pasta Salad
1 box Quinoa Pasta (Ancient Harvest on sale $1.99/box) = $1.99
4 oz Salsa (Frontera on sale $2.99/16 oz) = $0.75
4 oz Plain Yogurt (Stonyfield Farms Organic Greek Yogurt on sale $3.99/16 oz) = $0.99
Salt & Pepper
Sprinkle of minced fresh Basil (free from the garden!)

Cook pasta according to package directions. (If you prefer a cold salad, rinse the cooked pasta with cold water.) Stir in salsa and yogurt; adding additional yogurt or salsa for desired consistency/taste. Add salt & pepper to taste. Sprinkle basil on top and serve.

Serving suggestion:

Serve with a side of fresh fruit!
