Menu Plan Monday

Sorry, friends,
I didn’t mean to take quite this long of a blog absence! I had some automatic posts scheduled, but apparently Blogger didn’t cooperate. (I was without internet access over the weekend, so I was unable to check on the status.) I hope you all had a good holiday weekend!

Here is my menu plan for the week. Our garden has been producing lettuce and zucchinis like crazy, so I’ll definitely be using those this week.
To Do: Soak Lentils, Soak Pancake Batter, Thaw Beef

Monday

To Do: Make Sourdough Bread, Soak Rice, Thaw Turkey

Tuesday

To Do: Make Granola, Soak Beans, Make Yogurt

Wednesday

  • Breakfast: Eggs, Toast
  • Lunch: Turkey Salad Sandwiches, Carrot/Celery Sticks
  • Dinner: Bean Taco Salad, Bread & Butter, Watermelon

To Do: Bake Granola, Make Tahini (thanks, Lindsay!)

Thursday

To Do: Soak Millet

Friday

  • Breakfast: Millet w/Peanut Butter & Cinnamon
  • Lunch: Quesadillas, Carrot/Celery Sticks
  • Dinner: Zucchini Frittata, Watermelon

Saturday

To Do: Soak Pancake Batter

Sunday

  • Breakfast: Buttermilk Pancakes, Eggs
  • Lunch: Cheese Slices, Watermelon, Popcorn
  • Dinner: Salmon Salad Lettuce Wraps, Carrots/Celery
