Menu Plan Monday


We’ve been inundated by lettuce and zucchini in our garden, so those items are showing up pretty much every day this week in one meal or another! Sorry, not many recipe links this week; it’s a lot of “just winging it” homemade recipes! :) Our co-op order is scheduled to arrive later this week, so I’m looking forward to restocking some of our basic kitchen staple items.

I’m getting this post up a little later than I usually do. I’ve been babysitting a sweet little friend of ours, and then our midwives came for our home visit today. Here it is:

Monday
Breakfast: Buttermilk Pancakes, Peanut Butter
Lunch: Egg Sandwiches, Watermelon
Dinner: Barbecued Ginger Marinated Chicken, Grilled Zucchini, Green Salad, Coconut Bread

To Do: Make Sourdough Bread, Soak Millet, Soak Beans, Soak Rice, Thaw Beef

Tuesday
Breakfast: Breakfast Millet “Porridge”, Eggs
Lunch: Chef Salad, Bread
Dinner: Beans & Rice Casserole, Watermelon

To Do: Bake Sourdough Bread

Wednesday
Breakfast: Eggs, Toast
Lunch: Peanut Butter Sandwiches, Watermelon
Dinner: Zucchini-Beef Burgers (no buns), Green Salad, Leftover Millet

To Do: Thaw Turkey

Thursday
Breakfast: Morning Rice (use leftover Brown Rice), Eggs
Lunch: Cheese & Lettuce Sandwiches, Carrot Sticks
Dinner: Zucchini “Pasta” with Turkey (from freezer), Watermelon, Bread

To Do: Soak Lentils

Friday
Breakfast: Cheese Omelets, Toast
Lunch: Lentil & Veggie Tostadas (use homemade tortilla recipe)-from Better Homes & Gardens Cookbook, Watermelon
Dinner: Salmon Cakes, Hush Puppies, Green Salad

To Do: Soak Rice, Soak Pancake Batter

Saturday
Breakfast: Buttermilk Pancakes, Eggs
Lunch: Peanut Butter Sandwiches, Watermelon
Dinner: Meatball Stroganoff, Brown Rice, Green Salad

To Do: Soak Porridge, Soak Beans

Sunday
Breakfast: Oat or Buckwheat Porridge, Eggs
Lunch: Cheese Slices, Popcorn, Watermelon
Dinner: Thai Black Bean Lettuce Wraps, Bread & Butter
