Simple Fall Recipe: Baked Apples

On a chilly fall day, one of our favorite dishes is a pan of baked apples! They make a fun snack (often combined with a dollop of plain yogurt), round out a meal as a side dish, or even a simple dessert (sometimes with a scoop of real ice cream!). Our family enjoys this healthy treat at least once a week.

Baked Apples

Choose your appropriate number of apples (1/2 – 1 apple per person).

Cut the core/seeds out of each apple, but try to leave the base of the apple intact (just hollow it out from the top, without cutting through).

Place apples in a baking dish (I use a glass 9×9″ pan). To each apple, place inside the hollow:
1 tsp. Butter
1/2 tsp. ground Cinnamon
Drizzle of Maple or Sorghum Syrup (or sprinkle in some raw sugar/sucanat)
1 tsp. Raisins
Optional: 1 tsp. minced Almonds

Pour some water into the bottom of the pan (about a 1/2″ depth or so). Bake at 400* for 40 min. Apples will be soft, and the skins will be popping off! If desired, serve with yogurt or ice cream. Delicious!
