Menu Plan Monday 4.18-4.24

After months of jotted notes of scrap paper, I am back to getting a weekly meal plan online! I’ve found that preparations go a lot smoother in the kitchen when I have a plan (and I love having recipe links close at hand).

I have a basic meal plan routine that I rotate through, and then I just vary the recipes depending on the season and what is on hand (occasionally, grocery items I have ordered don’t arrive with our co-op delivery, so I have to improvise!). We do munch on snacks during the day; usually plenty of fruits & veggies, nuts/seeds, cheese, or leftovers from other meals.

How about you? I’d love to hear how you organize your meals! Here is what I’m thinking for this coming week:

Sunday

  • Breakfast: Soaked Oatmeal, Eggs
  • Lunch: (finger foods) Popcorn, Pear Slices, Carrot Sticks, Cheese
  • Dinner: Split Pea Soup, Bread, Green Salad with Homemade “Perfect” Dressing

To Do: Make Hummus, Soak Brown Rice, Thaw Bananas

Monday

  • Breakfast: Eggs, Toast
  • Lunch: Hummus on Bread, Apples, Green Salad
  • Dinner: Meatballs (made with ground venison)Brown Rice, Steamed Green Beans

To Do: Prepare Banana Bread, Soak Beans, Thaw Tomato Sauce

Tuesday

  • Breakfast: Blender Banana Bread (make with GF flours), Eggs
  • Lunch: Chicken Salad Sandwiches (using leftover chicken from the weekend), Pears
  • Dinner: Chili, Cheese, GF Corn Muffins, Carrot Sticks (company for dinner)

To Do: Soak Porridge, Soak Millet, Make Shampoo

Wednesday

  • Breakfast: Soaked Oatmeal or Teff Porridge, Eggs
  • Lunch: Peanut Butter Sandwiches, Apples
  • Dinner: Salmon Cakes, Millet, Green Beans
To Do: Bake GF Bread
Thursday
  • Breakfast: Blackberry Oven Pancake (use frozen berries), Eggs
  • Lunch: Cheese Sandwiches, Apples
  • Dinner: Chicken & Rice with Cream Cheese Basil Sauce, Green Salad
To Do: Soak Pancake Batter, Soak Black Beans
Friday

To Do: Make Yogurt, Soak Rice, Soak Millet, Thaw Tomatoes

Saturday

  • Breakfast: Herbed Cream Cheese Omelets, Toast
  • Lunch: Millet & Cheese Casserole, Pears
  • Dinner: Salmon/Rice/Cheese Casserole, Green Beans

To Do: Soak Porridge, Soak White Beans
