Menu Plan Monday 4.25-5.1

Some new things are in my kitchen this week! Last week, while we were out of town for my chiropractor appointment, I stopped by a discount produce market across the street. I stocked up on discounted produce (such as melon and organic lettuce!), so we have been enjoying those in our meals lately.

Plus, our co-op order arrived. (And I had a fun surprise when dear friends/neighbors brought my order home to me!) I had ordered some nitrate-free hot dogs, which have been a protein-rich “special treat” for the family. Over the weekend, I made yogurt and pumpkin cookies, so we have those on hand, as well. (Unfortunately, the organic peanut butter I ordered did not arrive, so I’m making do with the little I have right now!) So, here are my thoughts for the week:


  • Breakfast: Soaked Oat Porridge w/Berries (from freezer), Eggs
  • Lunch: Popcorn, Cheese, Apples
  • Dinner: White Bean & Veggie Soup, Chai Muffins

To Do: Make Chicken Stock, Soak Rice


  • Breakfast: Morning Rice with Peanut Butter, Melon
  • Lunch: Turkey Hot Dogs (nitrate-free), Carrot Sticks, leftover Chai Muffins
  • Dinner: Spinach Quiche, Fennel Salad

To Do: Soak Millet, Bake GF Bread, Soak Almonds


  • Breakfast: Cream Cheese & Herb Omelets, Toast
  • Lunch: Cheese Sandwiches, Apples, leftover Fennel Salad
  • Dinner: Venison Roast, Green Salad, Millet
To Do: Boil Eggs, Soak Chickpeas, Roast Squash Seeds & Almonds


  • Breakfast: GF Muesli (similar to this), Homemade Yogurt, Orange Slices
  • Lunch: Egg Salad Sandwiches, Green Salad
  • Dinner: Moroccan Veggie Soup, Bread, Berries (from freezer)

To Do: Soak Pancake Batter, Soak Millet, Soak Brown Rice


To Do: Soak Beans


To Do: Soak Rice


  • Breakfast: Apple Oven Pancake, Eggs
  • Lunch: Chef Salad, Bread
  • Dinner: Roast Chicken, Brown Rice, Carrot Sticks
To Do: Soak Porridge, Soak Beans
