Menu Plan Monday 5.16-5.22

I am looking forward to our monthly grocery co-op order arriving this week. We were blessed with a dozen eggs from our neighbors, so we will definitely be eating those in the coming days. I made a big stockpot batch of yogurt (1 gallon), which we will enjoy in fruit smoothies and for snacks. 


To Do: Thaw Chicken, Soak Brown Rice, Soak Garbanzo Beans

  • Breakfast: Brown Rice with Fruit & Nuts, Eggs
  • Lunch: Meatball Sandwiches, Apples
  • Dinner: Chicken & Veggie Stir Fry, Brown Rice
To Do: Make Hummus, Soak Millet

To Do: Soak Porridge

  • Breakfast: Soaked Porridge, Eggs
  • Lunch: Peanut Butter Sandwiches, Oranges
  • Dinner: Spaghetti Squash & Cottage Cheese, Green Salad
To Do: Soak Millet, Bake Bread

  • Breakfast: Chai Muffins, Eggs, Orange Smoothies
  • Lunch: Cheese Sandwiches, Carrots/Celery Sticks
  • Dinner: Roast Beef (in crockpot), Millet, Green Beans
To Do: Soak Pancake Batter

To Do: Soak Brown Rice

Breakfast: Apple Omelets, Toast
Lunch: Chef Salad, Bread
Dinner: Stroganoff, Brown Rice, Green Beans

To Do: Soak Porridge

Breakfast: Soaked Porridge, Eggs
Lunch: Popcorn, Cheese, Orange Smoothies
