Menu Plan Monday 5.2-5.8

It looks like it will be a busy week for us, so I’m relying a lot on our slow cooker and some old favorite recipes. What are your “fall-back” recipes for a busy week? I’d love some new ideas! 

Breakfast: Soaked Oat Porridge, Eggs
Lunch: Popcorn, Cheese Slices, Apples
Dinner: Spaghetti Pie (use Spaghetti Squash instead of pasta), Steamed Green Beans

To Do: Soak Beans, Thaw Tomatoes

Breakfast: Eggs, Toast
Lunch: Chicken Salad Sandwiches (use leftover chicken), Orange Slices
Dinner: Black Bean Soup, Corn Bread

To Do: Make Banana Bread, Soak Rice

Breakfast: Banana Bread (with GF flours), Eggs
Lunch: Cheese Sandwiches, Apples
Dinner: Venison Roast with Veggies, Brown Rice

To Do: Thaw Tomatoes, Make Yogurt, Soak Millet, Boil Eggs

Breakfast: Homemade Muesli with Homemade Yogurt
Lunch: Egg Salad Sandwiches, Carrot/Celery Sticks
Dinner: Cheese & Millet Casserole, Steamed Green Beans

To Do: Soak Brown Rice, Make Chicken Stock

Breakfast: Blackberry Oven Pancake (berries from freezer), Eggs
Lunch: Cheese Sandwiches, Apple Slices
Dinner: Crockpot Lemon Dill Chicken (double; take extra to friend with new baby)Brown Rice, Green Salad with Homemade Perfect Dressing

To Do: Soak Porridge

Breakfast: Soaked Oat or Teff Porridge, Eggs
Lunch: Chicken Taco Salad, Bread
Dinner: Veggie Soup (use chicken stock), Bread, Apple Slices

To Do: Soak Pancake Batter

Breakfast: GF Buttermilk Pancakes, Homemade Yogurt
Lunch: Cheese Sandwiches, Carrot/Celery Sticks
Dinner: Spinach Quiche, Fruit

To Do: Soak Beans, Soak Porridge
