Menu Plan Monday 5.23-5.29

We went to one of those “10 lbs or more” stores this past week (where you pay a discounted price per pound when purchasing 10 lbs or more).

I was able to stock up on 12 lbs of locally-grown asparagus (most of it for a big church dinner), as well as 10 lbs of fish, 6 lbs of vintage white cheddar cheese. (If you’ve visited me on Facebook, you may remember this is one of our baby boy’s favorite foods!) :)

I also picked up over 10 lbs of locally-grown organic spaghetti squash, since this is an alternative we enjoy using instead of packaged pastas. Calvin requested Thai food this week, so we made sure to purchase some fresh ginger and garlic, too! 40 lbs of apples came with our co-op order last week, so I’m hoping to can some homemade applesauce this week.


To Do: Soak Brown Rice, Soak Nuts/Seeds, Make Extra Fish for Wednesday
  • Breakfast: Cheese & Asparagus Omelets, Toast
  • Lunch: Peanut Butter Sandwiches, Carrot Sticks
  • Dinner: Thai-Style Beef Salad (use Brown Rice instead of noodles), Orange Slices
To Do: Make Extra Brown Rice for Tuesday, Bake Bread, Roast Nuts/Seeds, Boil Eggs

To Do: Make Stock


  • Breakfast: Soaked Porridge, Eggs
  • Lunch: Fish Salad Sandwiches, Oranges
  • Dinner: White Bean & Veggie Soup, Bread, Baked Apples
To Do: Soak Millet


To Do: Soak Brown Rice, Thaw Fish, Soak Beans, Make Applesauce


To Do: Soak Pancake Batter, Soak Millet
